Homemade Banana Pancakes

Fluffy banana pancakes that are perfect for breakfast or brunch. No boxed mix is required!


Ingredients:

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 ripe banana, mashed
  • 1 egg
  • ¾ cup milk
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract


Instructions:

  1. Mix the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Combine the wet ingredients: In another bowl, mash the banana. Add the egg, milk, melted butter, and vanilla extract. Whisk until smooth.
  3. Make the batter: Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix—a few lumps are okay.
  4. Cook the pancakes: Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2–3 minutes, then flip and cook for another 2 minutes.
  5. Serve: Stack the pancakes and serve with syrup, fresh fruit, or a dollop of whipped cream.
