Homemade Banana Pancakes
Fluffy banana pancakes that are perfect for breakfast or brunch. No boxed mix is required!
Ingredients:
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 ripe banana, mashed
- 1 egg
- ¾ cup milk
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
Instructions:
- Mix the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Combine the wet ingredients: In another bowl, mash the banana. Add the egg, milk, melted butter, and vanilla extract. Whisk until smooth.
- Make the batter: Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix—a few lumps are okay.
- Cook the pancakes: Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2–3 minutes, then flip and cook for another 2 minutes.
- Serve: Stack the pancakes and serve with syrup, fresh fruit, or a dollop of whipped cream.
