Strawberry Spinach Salad with Poppy Seed Dressing
Ingredients (Serves 4)
- 6 cups fresh spinach leaves, washed and dried
- 1 cup fresh strawberries, sliced
- ¼ cup thinly sliced red onion
- ¼ cup crumbled feta cheese (optional)
- ¼ cup sliced almonds, lightly toasted
Poppy Seed Dressing
- ¼ cup extra virgin olive oil
- 2 tablespoons white wine vinegar
- 1 tablespoon honey
- 1 teaspoon poppy seeds
- ¼ teaspoon salt
- ⅛ teaspoon freshly ground black pepper
Directions
- Combine dressing: In a small bowl or a jar with a tight-fitting lid, whisk (or shake) the olive oil, white wine vinegar, honey, poppy seeds, salt, and pepper until well combined.
- Assemble salad base: Place the spinach leaves in a large salad bowl. Top with the sliced strawberries, red onion, feta cheese, and toasted almonds.
- Dress & toss: Drizzle the poppy seed dressing over the salad just before serving. Toss gently to coat all ingredients evenly.
- Serve fresh: Enjoy immediately for the best texture and flavour.
